Chef Jago Moore
Chef Moore is one of the culinary experts you may have the pleasure of working with during your Beach Enclave vacation. Winner of the 2018 TCI Chop Off Cook Off Challenge, Chef Moore takes island dining to a new level. A brand ambassador for the Digicel Group, he once worked as a police officer in Grand Turk.
The affable Chef Moore began his cooking career as a pastry chef in 2006. He has served as a line cook, sous chef, head chef, restaurant owner, and private chef during his long and rewarding career. A man who loves what he does, he has been with the Turks and Caicos Hotel Association full-time since October 2018.

The menu for your cooking vacation is only limited by your imagination. Dietary restrictions are happily accommodated, including vegetarian, vegan, gluten-free, and keto.

To begin your day, choose from an assortment of juices, including orange, watermelon, or pineapple, and a platter of fresh fruit and berries served with organic yogurt. You can watch or assist your private chef in preparing a home-style omelet filled with mushrooms, tomato, bell pepper, spring onions, and cheese. Eggs cooked, any style, can be created with a combination of sausage, bacon, grilled tomato slices, peppers, cheese, mushrooms, or pan-fried potatoes.
On the lighter side, enjoy a green juice made with apples, cucumbers, celery, and parsley. Entrées include an egg white omelet stuffed with fresh vegetables, fresh spinach and arugula stir-fried in lemon and olive oil, and a green egg dish made with Brussels sprouts and leeks.
Freshly baked pastries such as muffins, banana bread, croissants, pain au chocolat, and assorted toast is served with organic butter, jam, and honey. Loaded bagels are topped with Scottish smoked salmon, avocado, and cream cheese. Additional options include pancakes with maple syrup and fresh fruit or fruit compote as well as an assortment of breakfast cereals.
For a delectable lunch, choose from various soups, salads, sandwiches, and hot courses. Whet your appetite with our gazpacho topped with pesto and croutons or a sweet and sour soup filled with tender chicken and vegetables.
Whip up a crunchy salad of garden greens tossed with a lemon and ginger vinaigrette or a grilled chicken Caesar with crispy bacon and Parmesan. If you want seafood, try your hand at a seared tuna and arugula salad with cherry tomato, basil, and a balsamic vinaigrette, or steamed tuna Niçoise with green beans, boiled egg, and anchovies. Our signature conch salad with onions, peppers, parsley, and lemon is not to be missed.
If you're hungry for a delicious burger, try a Wagyu beef burger with any toppings you like or a meatless sweet potato and lentil burger with blue cheese, mushrooms, fried egg, and crispy onions. On the sandwich front, we offer a chicken wrap with avocado, onion, and Manchego cheese, or a grilled zucchini, red pepper, and Mozzarella sandwich. All sandwiches are served with a side salad or French fries.

- Fried Rice Noodles with chicken, shrimp, or vegetables served in a lemongrass oyster sauce

- Minute steak topped with garlic butter and a side of asparagus
- Grilled catch of the day with roasted vegetables, olives, and feta cheese
Don't forget dessert! Delight in a refreshing fruit salad with mint and a choice of ice cream or sorbet, crème caramel, or our Coupe Dame Blanche drizzled with chocolate sauce, slivered almonds, and whipped cream.

Start your evening meal with an appetizer of grilled scallops topped with mango salsa, vegetable spring rolls with sweet chili dipping sauce, curried chicken spring rolls with curry dipping sauce, or prawn spring rolls with a sweet chili-coriander dipping sauce.
Soup starters include tomato and bell pepper, spicy seafood hot and sour, chicken noodles with mushrooms, chicken and vegetable, creamy carrot, or sweet potato, shrimp and coconut. Salads range from a traditional Caprese to a delicious Thai tuna salad and everything in between. Once again, don't miss the conch salad with chili, bell pepper, and coriander. Your taste buds will thank you.
Start the evening with one of our signature cocktails and get excited to help prepare the main course. Enjoy pan-roasted salmon with roasted potatoes, vegetables, and pesto sauce, or grilled catch of the day and a side of ratatouille. Everyone will enjoy making and eating a rack of lamb with basil pesto, roasted potatoes, and mixed vegetables. Top it off with chocolate bread pudding or chocolate mousse.
